Yes you read the title right…Protein CUPCAKES! I am on this super strict 6 week challenge and my diet is very restricted and I have been craving sweets like crazy! My friend shared a recipe with me and we made it together last night and they were really good!
” FTDI Vanilla cupcakes with chocolate cream frosting”
Cupcake Batter:
1 cup oatmeal, measure before blending into flour
1 tbsp baking powder
6-8 packets stevia
1 tbsp vanilla extract
1/4 cup liquid egg whites
Mix all ingredients together, then add water slowly until it becomes a runny cake batter consistency
Pour into 4 cupcakes, in a cupcake pan sprayed with Pam
Bake at 375 for 12 minutes
Frosting:
1/3 cup walden farms marshmallow dip
4 tbsp walden farms chocolate dip
Blend in blender or magic bullet
Add 1 scoop chocolate protein and mix thoroughly
Once cupcakes finish baking, let cool and spread frosting on each!

My gosh! Delicious! I modified slightly and added my chocolate protein scoop to the muffins vs the icing and they came out delicious! Thank you for sharing this recipe so I could celebrate my daughter’s 15th Birthday party while everyone else eats her cake. ❤️
